Appearance and Voice
Ethnicity: Chinese/Japanese, in Saiyuki-verse there's a lot of overlap so I'm rolling with it.
Eyes: brown
Hair: pale blond
Height: 1.75 m (5"10)
Weight: 65 kg (143 lbs) (Yeah, that's not much, but it's canon. See information on his build.)
Age: 47
Aura: If someone can sense that sort of thing, Koumyou is the moon, spiritually. Moonlight even gets stronger in his presence. The Sutra gives off nothing when it's dormant, every sense would see it as regular paper that somehow never falls off his shoulders or gets damaged in any way. Weird, huh?
Appearance:
Manga:

Anime:

Official live-action (ie the fully licensed musical):

A number of my icons are of a younger Koumyou because he got his own prequel manga series, but I play him at time of death. The only real visual differences are hair length, chakra (forehead dot), and some lines on his face. A few are also from Burial which is 8 years before his death, with shorter bangs and a ponytail instead of a braid. I play him as he looks above.
More on his physical build here. Mostly relevant in situations like swimming... but also, for example, if a character picks him up, they'd feel all them bones through his clothes.
Information on his default clothing (his traditional Sanzo uniform) here.
Voice:
Yes, he can sing like this, it's not just for the musical. All the main Saiyuki characters can ICly sing stupidly well.
Bonus!
That time in Burial we saw him get angry:
